Michael Schmitz has some really interesting work. Have a look at GenoTyp, a Flash application that lets you evolve fonts (effectively a genetic algorithm with the user carrying out selection), and his Evolving Logo thesis work, which uses what appears to be a combination of cellular automata and GAs to create a new logo for the Max Planck Institute.
